A simple, lighter, and very tasty version of Stewed Collard Greens. Great for the holiday table, or a Family Dinner.
Ingredients
1bunchfresh collard greens(at least 8 cups)
2tablespoonsextra virgin olive oil
1 mediumyellow onion
1mediumtomato(seeded and chopped)
6clovesfresh garlic(crushed)
1cupvegetable broth
½lemon(juiced)
2tablespoonsrice wine vinegar(or to taste)
1pinchcayenne pepper
Sea Salt and Ground Pepper(to taste)
Instructions
Clean the greens and strip the leaves from the stalks. Stack the leaves, 5 or 6 at a time, on top of one another, and roll like a cigar. Cut across the cigar to make thin strips.
In a large pot, over medium heat, add the olive oil, salt, pepper, and chopped onion. Saute until onions are translucent.
Add garlic, collard greens, broth, and cayenne. Simmer on medium low heat for 30 minutes, stirring occasionally to make sure greens cook and stew evenly.
Add lemon juice and vinegar, and cook another 15-20 minutes, until greens are tender.
Add chopped tomato, and simmer for another 5 minutes, or, if you prefer, stir it in just before serving.
