One of our staff members' favorite lunch selections. Fruit, yogurt and curry makes a great salad.
Ingredients

plain non-fat Greek yogurt
, nonfat

curry powder

frozen 100% apple -or- orange juice concentrate thawed
, undiluted

celery
▢

cup
red apple cored and sliced
▢

red grapes halved
▢

cup
garbanzo beans cooked and drained
▢

Italian parsley leaves picked and minced
Instructions
In a medium bowl, mix together yogurt, curry, and juice concentrate.
Add remaining ingredients and toss.
Keep refrigerated.
