This tasty, tangy spread is wonderful with fresh vegetables or between very thinly sliced bread for tea sandwiches. For one of our personal favorites, spread it on a thin toasted bagel slice, "bagel thin" or bagel chip with smoked salmon (lox) and dill on top, with a squirt of lemon. Or, save some of the cucumber, slice it very thin on a mandoline, and fashion yourself a Yogurt Cheese Roll-Up!
Ingredients
For Dip
1cupYogurt Cheese(see below)
½cupsbuttermilk (reduced calorie)
1tablespoonmilk
1tablespoongrated onion
¼tablespoonsWorcestershire sauce
⅓cupfinely chopped cucumber
For Yogurt Cheese
1tubUnflavored Greek Yogurt - be certain there is no pectin added
Instructions
Cucumber Spread
Combine all ingredients except cucumber, mixing until well-blended.
Add chopped cucumber.
Chill for several hours.
YoChee (Yogurt Cheese)
Drain a tub of high quality Greek Yogurt overnight (at least 8-10 hours) until the whey drips away and the resulting yogurt is as thick as cream cheese.
Leave plain for regular Yogurt Cheese, or, customize with herbs and spices, a dab or jelly or jam, or dried fruits.
This thick, spreadable yogurt-cheese is a high protein low fat replacement for cream cheese.

We use Fage or Trader Joe's Greek Yogurt because those products do not use pectin, a nasty thickener which has no place in our yogurt. Pectin also prevents the drained yogurt from thickening to a spreading consistency. You need high quality Greek Yogurt to make the best recipes.
