Ingredients
2cupsgreen lentils(washed)
1rindParmigiano (about 1 oz)
2cupsroot vegetables of your choice (squash, carrots, celery, onion, celery root)
2slicessmoked bacondiced
1sprigthyme
4clovesgarlicwhole
2bay leaves
⅓cupwhite wine
6cups vegetable stock
Instructions
Put your pot on the stove to heat up.
Add olive oil, vegetables and bacon.
Sautée for 2 minutes, stirring constantly.
Add lentils and mix completely. Add stock and salt to taste.
Drop Parmigiano rinds into the soup in a cheese cloth.
Cook on low until the lentils start to split. Watch carefully -- these may cook to your desired tenderness in at little as 30 minutes or as many at 60 depending on your heat level, and quantity of vegetables, etc.
