Created by Lake Austin Spa for a sweet but low fat breakfast treat
Ingredients
1-1/2cupsall purpose flour
½cupstone ground cornmeal
2tablespoonssugar- or favorite granulated sweetener, such as maple sugar or coconut sugar
1teaspoonbaking powder
1teaspoonbaking soda
¼teaspoonsalt
2tablespoonsreduced calorie butter or margarine- suitable for baking
¼cupgolden raisins- or dried berry of your choice
¾cupbuttermilk- light or reduced calorie if available
vegetable cooking spray
Instructions
Preheat oven to 375°. Spray a baking pan with cooking spray.
Combine first six ingredients (flour through salt).
Cut in margarine or butter spread with a pastry blender or forks until mixture is crumbled but evenly textured. Do not let the margarine melt.
Add raisins (or dried fruit) and buttermilk, and mix until just moistened and combined.
Turn out onto a lightly floured board and knead five times. Roll into an 8 inch circle. Cut into 10 wedges. Separate and arrange wedges 1/4 inch apart on a sprayed baking sheet.
Bake for 22 minutes at 375° Serve warm. Enjoy!
