A creamy, tasty chicken salad perfect as a spa lunch.
Ingredients
¼cuplow-fat mayonnaise
½cuplow-fat or non-fat plain yogurt- Greek yogurt preferred
2teaspoonslemon juice
¼teaspoonsalt
¼teaspoonfresh ground pepper
3cupscooked chicken breast- chopped or shredded
1wholered apple- cored and diced
1cupseedless grapes- halved
1cupcelery- chopped
½cupwalnuts- chopped
Instructions
Whisk mayonnaise, yogurt, lemon juice, salt, and pepper in a large bowl, until well-mixed, creamy and frothy.
Add chicken, apple, grapes, celery, and walnuts. Stir to coat well and serve.

The dressing can be made ahead of time and refrigerated overnight if desired. The chicken can be cut, boiled and refrigerated until ready to use, or you may choose to use pre-cooked chicken to shorten the preparation time.You can also try using 1/2 of a blended medium avocado (instead of the mayonnaise) mixed with the yogurt for a boost of monounsatured fat, creaminess, and color.
