This Breakfast Casserole from Shane Diet & Fitness Resorts is easy, family friendly, and is ideal for brunch or spa parties, too!
Ingredients
1cupcauliflower florets
1cupbroccoli florets
½red pepper, sliced
½yellow pepper, sliced
½red onion, chopped
8ozlean ground turkey
1tspextra virgin olive oil
1garlic cloves, minced
⅛tspchili flakes
5eggs
Fine Pink Salt
Pepper to taste
Instructions
Preheat oven to 350 F.
Place cauliflower, broccoli florets, red and yellow pepper and onion on baking sheet lined with parchment paper. Bake at 350 for 15 minutes or until soft.
Heat the olive oil over medium heat in a skillet. Add the ground turkey and cook until brown.
Add the garlic, chili flakes and season to taste.
Mix well with baked veggies.
Beat the eggs with salt and ground black pepper.
Add meat mixture to a 4×8-inch casserole dish or two oven-safe gratin dishes.
Add the eggs and mix well.
Place in oven and bake for 30 minutes or until eggs are set in the middle.
Let sit for about 5 minutes before serving.
