This recipe for a wonderful sandwich will make use of the copious amounts of turkey you're certain to have on hand this month. While not a typical recipe for "spa cuisine", we've lightened this recipe. The end result is a a sandwich bursting with flavor, interesting textures, and making the most of its calories.
Ingredients
Cranberry-Dried Plum Relish
1cupcranberries
½cuppitted dried plums
1smalltangerinepeeled
¼cuppecans
2tablespoonshoney
Sandwich
4wedgesLaughing Cow Cheese
½teaspoonground sage
8slicespumpernickel bread
12oz.turkeycooked and thinly sliced
4lettuce leaves
Instructions
For Cranberry-Dried Plum Relish
In food processor, process cranberries, dried plums (or dates or prunes), tangerine, pecans and sweetener until coarsely chopped, pulsing on and off. Add additional honey or agave to taste (but we found the dates to be a very sweet ingredient). Makes approximately 2 cups.
For Sandwich
In small bowl, mix together cheese wedges and sage until blended.
To assemble sandwiches, spread cheese mixture evenly on four slices of bread. On each slice, layer ¼ of turkey, 1-2 tablespoons of relish and 1 lettuce leaf over cheese mixture; close with second slice of bread.
Reserve remaining relish for later use. Store, covered in refrigerator, for up to 1 week.
