Pritikin Whole Wheat Bread Pudding
This Whole Wheat Bread Pudding recipe celebrates all the goodness of the Pritikin Eating Plan – fruit, vegetables, fresh herbs, and naturally-fiber-rich whole grains. You’ll love the hearty addition of wheat bread and plump raisins in this dish, which is wonderful warm, cold, and even left over for a breakfast treat.
Ingredients
- 4 cups whole wheat bread - hearty and rustic, cut into cubes
- ¼ cup Splenda - granular
- 2.5 cups soy milk or skim milk
- 1 teaspoon cinnamon
- 2 tablespoons raisins
- ½ teaspoons nutmeg
- 1 teaspoon vanilla
- 3 whole egg whites - slightly beaten, but not stiff
Instructions
- Soak bread in milk and add spices
- Fold in egg whites
- Divide between 8 ramekins which have been prepared with cooking spray
- Bake at 350 for 25 minutes.

I’d rank this as “okay” — not great but not terrible. The other recipe for Apple Walnut Bread Pudding was a tad more flavorful.
