Whole Wheat Applesauce Bread
Applesauce is such a versatile ingredient in baking — it reduces fat and refined sugar, adds flavor and increases moisture. Here, the California Walnuts board has created a Whole Wheat Applesauce Bread recipe which takes advantage of low-fat low-sugar applesauce, whole wheat, Greek yogurt, and walnuts. The primary sweetener is maple syrup, and ground flaxseed adds a nutrition boost by adding healthy fat, antioxidants, and fiber.
This quick bread is delicious toasted or at room temperature. Try it with ricotta peanut butter spread for an interesting brown-bag lunch!
Ingredients
- 3 large eggs
- 1-3/4 cups applesauce - natural, unsweetened
- ½ cup pure maple syrup
- ½ cup Greek yogurt - fat free, plain
- 2 tablespoons canola oil
- 2 cups whole wheat flour
- 1 cup all-purpose flour
- ¼ cup ground flaxseed
- 1 tablespoon ground cinnamon
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon freshly grated nutmeg
- ½ teaspoon salt
- 1 cup California walnuts - chopped
Instructions
- Preheat oven to 325°F.
- Spray two 8×4 inch loaf pans with nonstick cooking spray and set aside.
- In a large mixing bowl, whisk together eggs, applesauce, maple syrup, Greek yogurt and canola oil.
- In a separate medium bowl, combine whole wheat flour, all-purpose flour, ground flaxseed, ground cinnamon, baking soda, baking powder, nutmeg and salt. Add mixture of dry ingredients to wet ingredients and stir them together. Fold in walnuts.
- Pour evenly into prepared pans and bake for 50-60 minutes or until a toothpick inserted in the center of the loaves comes out clean or with a few crumbs.
- Garnish with whole walnut halves, slice and serve.
This was excellent. Added pumpkin seeds and flax and chia seeds because we really like crunchy tea bread.
