Vermont Maple Sweet Potatoes
Vermont Maple Sweet Potatoes spotlight wonderful ingredients from Vermont, but can easily be made wherever you are from, as well. Ingredients
- 2 pounds sweet potatoes or yams peeled and sliced into wedges or large cubes
- 1 cup unsweetened apple juice
- ¼ cup Vermont maple syrup
- 1 teaspoon fresh ginger grated
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground cardamom
- ¼ teaspoon tamari
- Scant Course Ground Pepper
Instructions
- Preheat oven to 350 degrees.
- Place large cubes or wedges of sweet potatoes in 8 cups boiling water and simmer for 5 minutes to begin to soften.
- In a large baking dish, stir together juice, syrup, ginger, spices and tamari.
- Drain potatoes and add to the baking dish, coating evenly with the juicy marinade.
- Bake uncovered for 1 hour, stirring every 15 minutes until potatoes are tender, and juice has thickened, and bits have caramelized. Dust with course ground pepper.
