Low Fat Sweet Potato Pie
Sweet Potato Pie is southern favorite treat which both tastes good and can be good for you. Terry Conlan was the Executive Chef (1992-2011) at Lake Austin Spa Resort in Texas and author of Lean Star Cuisine, Low-Fat Cookery from the Lake Austin Spa Resort (1996) and Fresh: Healthy Cooking and Living from Lake Austin Spa Resort (2003). He developed this recipe for a nutritious dessert loved by guests.
Ingredients
- 1 pound sweet potatoes
- 2 whole eggs
- 2 additional egg whites (beaten stiff)
- ⅔ cup honey
- 1-2/3 cup evaporated skim milk
- 1-1/2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- ½ teaspoon ground cloves
- 12 gingersnaps (crushed) (see notes)
- 1 tablespoon reduced fat butter spread (or margarine)
Instructions
- Slice sweet potatoes and steam until tender. Drain, peel and press into a measuring cup to yield 1-1/2 cups.
- Combine sweet potatoes with remaining ingredients, EXCEPT the beaten egg whites, and process until smooth.
- Fold in beaten egg whites
- Make a crust of the crushed gingersnaps and margarine or butter spread, and press into a 9 inch pie pan or springform pan. Pour in prepared filling.
- Bake at 400 degress for ten minutes.
- Lower oven to 350 degrees and bake an additional 35 minutes until center is set.
- Chill before slicing.

Ok, didn’t like the crust because I could taste the fake butter spread. That means just use a different fat for the crust I suppose!
