Sweet and Spicy Turkey Meatballs – Hilton Head Health
The Chef and Culinary Team at Hilton Head Health have created a low-calorie, healthy gourmet cuisine with an emphasis on local and natural ingredients to ensure a well-balanced weight loss diet. One of the popular features of the program is when H3 teaches participants how to prepare meals, snacks and beverages, like this recipe for SWEET AND SPICY TURKEY MEATBALLS WITH APRICOT SAUCE. Tip: This is good with all ground chicken or turkey, or, a combo of ground poultry and lean ground pork. We happen to like it best with the turkey-chicken combo.
Ingredients
MEATBALLS:
- ½ cup soft bread crumbs
- 2 tablespoons skim milk
- 1 egg white
- ¼ cup white onion - finely chopped
- 2 tablespoons green onions - or chives - finely chopped
- ¼ cup dried apricots - finely chopped
- ½ teaspoon salt
- 1 clove garlic - minced
- ¼ teaspoon chili powder
- 6 oz lean ground turkey breast - or use all turkey
- 6 oz lean ground chicken breast - or use all chicken
SAUCE
- ½ cup apricot nectar
- 1 teaspoon cornstarch
- ¼ teaspoon ancho chili powder
- ⅛ teaspoon salt
- ⅛ teaspoon ground nutmeg.
Instructions
- Preheat oven to 350°F.
- Line a baking sheet with foil and spray with cooking spray. Set aside.
- In a bowl, combine bread crumbs and milk.
- Let stand for 5 minutes. Then stir in egg white, onion, apricots, salt, garlic, and chili powder.
- Add ground chicken and turkey; mix well.
- Shape meat mixture into 24 small meatballs.
- Place meatballs on the prepared pan.
- Bake for 15 to 20 minutes or until 165°F.
- Drain on paper towels if necessary.
- In the mean time, prepare sauce; toss meatballs gently to coat.
SAUCE:
- In a small saucepan, combine sauce ingredients
- Cook and stir over medium heat until thick and bubbly. Remove from heat.
- Before serving, heat and stir 1 minute more.
