Canyon Ranch Sweet and Sour Shrimp Wraps
Shrimp Salad is usually a fatty calorie-laden affair, full of mayonnaise and fatty dressings. Canyon Ranch Spa created this guilt-free version of Sweet and Sour Shrimp Wraps which are a guest favorite. Shrimp and fresh, crispy veggies are dressed with a sweet and sour sauce, and wrapped in whole wheat tortillas. Each serving is less than 300 calories, perfect for a spa lunch.
Ingredients
FILLING
- ½ lb cooked shrimp - peeled, deveined and tails removed
- ½ cup red bell peppers - julienned
- 1 tablespoon peppadew peppers - chopped
- ½ cup fresh yellow tomatoes - diced
- ½ cup shredded red cabbage
- ¼ cup red onions - julienned
SWEET & SOUR DRESSING
- ¼ cup rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon red chili flakes
- ½ teaspoon fresh ginger root - minced
- 2 tablespoons orange marmalade
- ¼ teaspoon sea salt
- ¼ teaspoon freshly ground black pepper
WRAPS
- 4 each whole-wheat flour tortillas - about 10-inches in diameter
OPTIONAL
- 1 small avocado - diced
- 1 handful sprouts - bean, clover or alfalfa are all good
- 1 handful cucumber - diced
- 1 handful carrot slivers - finely diced
Instructions
- Chop fulled cooked shrimp into bite-size pieces.
- In a large bowl, combine shrimp, peppers, tomatoes, cabbage and onions. Add other optional veggies (avocado, cucumber, carrots, or sprouts) if using.
- In a small bowl, combine all ingredients for Sweet and Sour Dressing and blend with a hand-held mixer.
- Add 1/4 cup of the dressing to shrimp/vegetable mixture and toss together until well combined.
- Place tortilla onto flat surface. Place 1/3 cup shrimp and vegetable mixture on each tortilla. Roll burrito style. Serve immediately.
