Summer Vegetable Fritters – Skyterra Recipe
Summer Vegetable Fritters are a guest favorite appetizer courtesy of Skyterra Wellness Retreat. These tasty fritters can easily be enhanced with protein, chick peas, lentils, cashews and more! Delicious served over a salad, with sliced avocado and white beans.
Ingredients
- 1 medium Carrot
- 1 small Zucchini
- 1 small Yellow squash
- 1 small Red onion - minced
- 2 cloves Garlic - minced
- 1 each Egg
- 1 teaspoon Kosher salt
- 1 teaspoon Black pepper
- 1 teaspoon Oregano - dried
- ½ teaspoon Cumin
- ½ cup AP Flour
- 4 tablespoons Olive oil - divided
Instructions
- Grate carrot, zucchini, and yellow squash into ribbons with a cheese grater or spiral-cutter directly into a mixing bowl.
- Add all ingredients, except for the olive oil, to the bowl and mix thoroughly until well incorporated.
- Form the mixture into small patties (using about 2 tablespoons of batter for each).
- Add 1/2 of the olive oil to a preheated medium sized skillet -- you'll be adding a bit more oil as you cook the patties and the level goes down.
- Place 3-4 patties into oil, cook for 1 - 2 minutes on each side until browned. Remove and set onto a plate and cover with foil to keep warm.
- Prepare the rest of the patties until all of the mixture is gone, replenishing the oil in the pan as needed.
- Enjoy!
