Sauteed Spinach and Roasted Tomatoes
Spinach is a nutrient-dense food, low in calories but high in vitamins, minerals and phytonutrients. Try it with roasted tomatoes and garlic for a savory side dish. This Sauteed Spinach and Roasted Tomatoes recipe is courtesy of Shane Diet & Fitness Resorts. Big bonus points if you are lucky enough to have fresh tomatoes during the summer.
Ingredients
- 5 oz baby spinach leaves
- 1 cup cherry tomatoes - or grape tomatoes - cut in half
- 1 cup onion - sliced thin
- 3 teaspoons olive oil
- 2 cloves garlic - chopped
- ¼ cup water
- salt and pepper - to taste
Instructions
- Preheat oven to 400° F
- In a small bowl add cherry tomatoes, 2 teaspoons olive oil, and a pinch of salt and pepper. Cook for 20 minutes until tomatoes are tender.
- In a skillet, saute 1 teaspoon olive oil, onion, and garlic, until tender.
- Stir in spinach to skillet, cover, and cook over medium heat for 3 minutes until spinach is wilted and soft.
- Add roasted tomatoes to skillet of spinach, combine well, and serve immediately.
