Sparkling Peach Bellinis – Cocktails, Mocktails and Spa Party Drinks

You clean eating program may mean you are abstaining from caffeine, wine and spirits entirely, or, it may mean that on special occasions, you want just a bit of the special stuff to mark the event. Our collection of recipes for lighter cocktails and mocktails are the perfect refreshers to raise a glass with friends and family. This recipe is for Sparkling Peach Bellinis using roasted peach halves (which can be fresh, or thawed from frozen).
Ingredients
- 3 medium peaches halved, or, 8-9 thawed peach slices
- 1 tablespoon honey
- 1 can peach nectar 11 oz , chilled
- 2 bottle champagne 750 ml or sparkling grape juice, or Prosecco
Instructions
- Line a baking sheet with a large piece of heavy-duty foil (about 18x12 in.). Place peach halves, cut sides up, or peach slices (thawed) on foil; drizzle with honey. Fold foil over peaches and seal.
- Bake at 375° for 25-30 minutes or until tender. Cool completely; remove and discard peels. In a food processor, process peaches until smooth.
- Transfer peach puree to a pitcher. Add the nectar and 1 bottle of champagne; stir until combined.
- Pour into 12 champagne flutes or wine glasses; top with remaining champagne. Serve immediately.
