Shrimp Tomato Curry

This Shrimp Tomato Curry recipe, called Shrimp Fantasia by New Life Hiking Spa, comes together quickly and can be as mild or spicy as you like it! High Protein, Low Fat, Low Carb, and less than 150 calories per serving.

Shrimp Tomato Curry

Shrimp Fantasia - Seafood Tomato Curry

This seafood entree comes together quickly and can be as mild or spicy as you like it!  High Protein, Low Fat, Low Carb, and Mucho Flavor!  Plus, less than 150 calories per serving.

Ingredients

  • 1 pound shrimp (about 20) thawed and deveined
  • 1 teaspoon dark toasted sesame oil
  • 4 tablespoons medium plum tomatoes (small diced, or, sliced cherry tomatoes if you prefer)
  • 4 cloves garlic (minced)
  • 2 whole scallions c(hopped)
  • 2 teaspoons fresh ginger (peeled and chopped)
  • 1 small handful Fresh Basil (chopped)
  • 1-1/2 teaspoons curry paste (see notes)
  • Freshly ground black pepper
  • Tamari (to taste)

Instructions

  • Heat sesame oil in large skillet, saute scallions, garlic, ginger and spices for 2 minutes. 
  • Add shrimp and cook for 2 minutes. 
  • Add tomatoes, basil, pepper and tamari. Cook on medium heat until shrimp are done and tomatoes are heated through.

NLHS recommends Patak’s Mild Curry Paste, or, you can substitute 1 - 1/2 teaspoons (combined) of cumin, chili, coriander, and other Indian spices.

    I rmemeber eating at an Indian cuisine restaurant in early college days and the waiter said, for me (a first timer) that his favorite curry was always seafood — not flesh like beef, chicken, pork. I tried it and it’s just always been true from me from the early experience, I like curried shrimp, fish and crab better than any other! This is a good curried shrimp dish, very easy.
