Red Mountain Spa Shrimp Diablo

This fiery dish comes together quickly. Perfect for a cold winter night or a cool Autumn evening. Most of the time is in making the millet cakes, so try it on polenta instead, or just as an entree with salad.

Ingredients

Shrimp

  • 18 Jumbo Shrimp
  • 1 cup Roma Tomatoes - seeded and diced small
  • 2 teaspoons fresh garlic - minced
  • 2 teaspoons shallots - minced
  • 4 tsp cilantro - chopped

Seasoned White Wine

  • 1 cup White Wine
  • 2 tablespoons Paprika
  • 2 teaspoons Chile Powder
  • 2 teaspoons Chipotle with Adobo - chopped
  • ¾ teaspoons Fine Pink Salt

Millet Polenta Cakes

  • 3 tablespoons raw millet - plus 3 tablespoons boiling water
  • 3 tablespoons Yellow Onion - diced
  • ½ teaspoons fresh garlic - minced
  • 2 oz Polenta Cornmeal
  • 6 oz Water
  • 1 ½ tablespoons Smoked Gouda - diced small
  • 1 pinch Fine Pink Salt

Instructions

Millet Polenta Cakes

  • Pour 3 T boiling water on 1.5 T raw millet. Let set until cooled (pour off any excess water).
  • Bring Water, Onions, Garlic and Salt to a boil. Reduce heat to simmer.
  • Whisk in Polenta (make sure it does not lump). Cook 5 minutes.
  • Add Gouda. Mix until dissolved.
  • Add Cooked Millet.
  • Spread on silpat in 1/2" thick rectangle and cool.
  • Cut rectangle in half and cut squares diagonally into triangles.
  • Sauté or place on grill to lightly char.

Seasoned White Wine Sauce

  • Place wine, paprika, chile powder, chipotle, and salt in shaker cup.
  • Shake well and set aside.

Shrimp

  • Bring Pure Olive Oil to smoke point. Add Shrimp. Sauté 2 minutes and turn.
  • Add Diced Tomatoes. Sauté 1 minute.
  • Add Minced Garlic and Shallots. Sweat 1 minute.
  • Add 1 cup Seasoned White Wine. Reduce until thickened.
  • Place Millet Polenta Cake on plate. Arrange Shrimp. Pour Sauce on Shrimp. Enjoy!

A serving is typically 3 pieces of shrimp and 2 triangles of polenta cake.
This looks like quite a complicated and long recipe, but actually most of the prep is preparing the polenta millet cakes
You could take two shortcuts: 1) Make the millet and polenta cakes ahead of time and just grill or char before serving, or 2) buy a "tube" of cooked polenta from a good grocer, slice it into rounds and char or grill as provided, and simply serve your shrimp and tomato sauce over your polenta rounds.
