Pritikin Shrimp in White Wine Sauce
The healthiest animal food choices are omega-3-rich fish such as salmon, sardines, herring, mackerel, and trout, advises the Pritikin Eating Plan. Most other fish, plus shelled mollusks like clams and scallops, are healthy choices, too. The award-winning chefs at Pritikin are masters at showing people how delicious healthy eating can be, and this Shrimp in White Wine Sauce, is always a hit in the dining room at the Pritikin Longevity Center. Succulent shrimp and tomato with absolutely no butter! What you’re seeing is a lovely sauce of white wine, garlic, and shallots. So simple to make (you’ll learn how if you’re a guest), and “clean eating.”
Ingredients
- 2 tablespoons shallots chopped
- 2 tablespoons garlic finely minced
- 1 large tomato (diced, but see note)
- 1 pound shrimp (medium) peeled and deveined
- ½ cup dry white wine
- ¼ teaspoon black pepper (freshly ground)
- 1 tablespoon fresh dill , chopped
- Spinach or other Greens
Instructions
- In a medium-hot NONSTICK skillet, sauté shallots and garlic until soft. Add diced tomato and shrimp, and sauté for 2 minutes. Use a spray of aerosol cooking spray if needed.
- Add wine and pepper, and cook about 4 minutes more (till shrimp turns pink). Finish with dill.
- Remove Shrimp, add and toss fresh spinach or greens into the pan with juices remaining, and saute quickly and lightly.
- Serve shrimp over wilted greens.
- Freeze what you don’t eat and use as a base for a homemade marinara sauce for a future pasta dinner.

Very simple, tasty, elegant.
“Neither great nor terrible.” Decent enough for a Wednesday night cleaning out the freezer.
This was okay — somewhat between “pretty decent” and “good but not overwhelming.” Was glad to use up the prawns we had but really, it’s no match for sauce made with butter, which isn’t the fault of the recipe of course!
