Pritikin Mango Compote
This may be a touch decision to make — will you enjoy this Mango Compote for breakfast over oatmeal, pancakes, crepes or toast, or, will you serve it at lunch with cottage cheese? Or will you save it for dessert? It’s delicious on its own, over rice pudding, frozen yogurt, and a host of other treats for breakfast, lunch or dessert. Thanks to the award-winning chefs at the Pritikin Longevity Center in Miami for this no-sugar-added fruity treat.
Ingredients
Compote
- 3 whole mangoes - peeled and medium-diced or thinly sliced
- 1 pinch cinnamon
- 2 tablespoons apple juice concentrate - unsweetened, undiluted
- 2 tablespoons white wine
- 1 teaspoon vanilla bean paste - or vanilla extract
- 1 pinch nutmeg - fresh ground
- 1-2 pinches cayenne pepper - for a spicy version
Optional Garnishes
- ½ cup raspberries for garnish
- 1 recipe creamy vanilla sauce - See Notes
Instructions
- In a large stockpot add all ingredients. Cook over medium heat for 5-7 minutes, stirring constantly.
- Cool, portion and serve.
