Pritikin Crispy Potato Skins
One crispy (or rather, greasy) potato skin at a restaurant is often 400 calories and more (and who stops at just one?) These easy Pritikin Crispy Potato Skins are only about 120 calories – for 4 skins!
Ingredients
Potatoes
- 4 medium potatoes - cleaned and scrubbed
- 1 spritz Olive Oil (or similiar) Cooking Spray
Pritikin All Purpose Seasoning
- 2 tablespoons Pritikin All-Purpose Seasoning - or your favorite low-sodium seasoning blend
Or Create Pritikin Seasoning At Home
- 2 teaspoons paprika
- 2 teaspoons chili powder - low sodium
- 2 teaspoons onion powder - not onion salt!
- 2 teaspoons oregano
- 2 teaspoons coriander
- 2 teaspoons McCormick® Granulated Garlic - not garlic salt!
- 2 teaspoons lemon pepper - salt free or low-sodium
Instructions
- Cut each potato in half, lengthwise, and then again, to make spears.
- Slice away most of the white flesh, leaving a bit of flesh on each "peel / skin." About 1/4 inch is ideal. Save the flesh for another use.
- Add skins to a pot of cold water, sufficient to cover them completely.
- Bring to a boil, cover, and cook until softened (about 2-3 minutes).
- Remove lid, drain potatoes.
- Place potato pieces (careful, they will be hot and soft!) on a baking rack, which you've coated with canola oil cooking spray.
- Make your spice blend, if you're creating it at home, by mixing all the spices well.
- Sprinkle potato pieces generously with spice mix.
- Roast in an oven at 450 degrees, for 30-45 minutes, until crisp and golden.
