Pritikin Crispy Breaded Cauliflower

Ingredients

  • 1 medium head cauliflower - broken into smaller pieces
  • ¼ cup whole weat flour
  • 3 tablespoons egg whites - or egg beaters
  • ½ cup whole wheat bread crumbs
  • 1 tablespoon Pritikin® All-Purpose Seasoning

Instructions

  • Preheat oven to 400 F
  • Spray a sheet tray with cooking spray and set aside
  • Cut cauliflower into pieces and steam for 2-3 minutes, cooking it only partially.
  • Take some whole wheat or whole grain bread and grind into bread crumbs in the food processor.
  • Season the flour and bread crumbs with seasoning blend
  • If using egg whites, lightly whisk
  • Dip cauliflower in (1) the flour, then into (2) the whisked egg whites or egg beaters, then into (3) the bread crumbs.
  • Place cauliflower on spray baking tray and bake for 30-45 minutes or until desired crispiness.
  • Enjoy!
