Pritikin Chilled Raspberry Cucumber Soup
This Chilled Raspberry Cucumber Soup is terrific on a warm day, but we like to serve it in chilled martini classes at spa parties. So easy and attractive. The Pritikin Eating Plan recommends you eat at least 5 (and preferably many more!) servings of vegetables each day. Not only are they nutritious, you’ll just naturally eat fewer calories and shed excess weight. This recipe is a perfect pairing of both vegetables and fruit.

Ingredients
- 3 cups raspberries - fresh, rinsed
- 1 cup cucumber - seedless, cut into chunks
- ¼ cup apple juice concentrate - thawed, undiluted
- 3 cups water
- ¼ cup cucumber - seedless, finely diced for garnish
Instructions
- In a blender, combine all ingredients except the finely diced cucumber garnish. Blend.
- Chill. Serve garnished with finely diced cucumber on top.
