Pritikin Carrot Pineapple Salad
This Carrot Pineapple Salad is always in the “Top 30” recipes among guests at Pritikin Longevity Center + Spa. We like the crunchiness of the carrots, which gives a satisfying sensation, and the natural sweetness and tartness of the pineapple is a perfect partner. The Pritikin Eating Plan recommends you eat at least 5 (and preferably many more!) servings of vegetables each day. Not only are they nutritious, you’ll just naturally eat fewer calories and shed excess weight. This salad recipe is a perfect pairing of both vegetables and fruit.
Ingredients
Base Salad
- 2 whole carrots - shredded or finely chopped
- ½ whole pineapple - peeled, cored, and diced
- 2 whole limes - juiced
- 1 tablespoon Greek yogurt - unsweetened, non-fat
Optional
- 1 tablespoon basil - fresh, cut into thin strips
- 1 tablespoon Fresh mint leaves - fresh, cut into thin strips
- 1 tablespoon chives - fresh, chopped or snipped
- ¼ teaspoon black peppercorns - freshly ground
Instructions
- In a large bowl, combine and mix all ingredients well.
- Let sit for 10 minutes. The lime juice will macerate with the fruit and yogurt, creating a light and loose "dressing."
- Chill. Serve cold.
