Pritikin Banana Ginger Parfait

- 3 medium bananas ripe
- 2 tablespoons apple juice concentrate frozen, no sugar added
- 1 teaspoon pure vanilla extract
- 2 cups plain non-fat Greek yogurt
- 1 piece Fresh Ginger Root
- ½ cup Splenda Granulated Sweetener
- 1 pinch orange zest
Instructions
- Slice skin off ginger root and grate, using a microplane, to extract 1 teaspoon of juice.
- Mash bananas using a wire whip.
- Combine bananas, apple juice concentrate, vanilla, yogurt, orange zest and ginger juice in bowl. Mix well.
- Top with fresh fruit, berries, chia seeds, and other toppings to your liking.
