Coconut Pretzel Granola Bars – Hilton Head Health

Ingredients
- ¼ cup Honey
- ½ cup Peanut butter
- 1 tablespoon Coconut oil
- 1 teaspoon Vanilla extract
- 1 scoop Vanilla whey protein powder -- at Spa Index, our favorite brand is Unjury
- 1 cup Old fashion oats -- avoid instant
- 1 cup Pretzels
- 1 cup Almonds
- ½ cup Raisins -- or cranberries if you prefer
- ½ cup Coconut - shredded, unsweetened
Instructions
- Lightly spray a 9 x 13 baking dish with non-stick spray.
- In a small sauce pot combine honey, peanut butter, coconut oil, and vanilla extract. Heat on medium-low heat until the mixture is melted together, stir occasionally to avoid burning.
- In a food processor pulse the almonds and pretzels until the mixture is even in size.
- In a large bowl combine; almond mixture, oats, protein powder, raisins and coconut, pour in melted peanut butter mixture. Mix until evenly combined.
- Pour mixture into the baking dish and let cool.
- The granola will firm up best in the refrigerator.
- Let cool, and cut into 16 bars.

Chef Karla has been featured live on the Hallmark Channel’s Home & Family Show. In addition to her love for nutrition and healthy cooking, Karla enjoys teaching part-time fitness classes.
