Orange Marinated Beets – Recipe by Rancho La Puerta Spa
Imbued with the fresh zest of oranges and the earthy flavor of fresh beets and a tangy splash of vinegar, this recipe for Orange Marinated Beets recipe is a colorful and vibrant side dish for your spa lunch. Ingredients
- 1 orange
- 2 tablespoons extra virgin olive oil
- 1 tablespoon white wine vinegar
- Sea Salt and Ground Pepper , to taste
- 1 pound beets (golden, red or candy stripe)
- ½ onion , thinly sliced
Instructions
- Zest the orange to equal 1 teaspoon.1 orange
- Juice the orange and set aside 2 tablespoons (reserve remaining juice for another use.)
- Whisk together juice, oil, vinegar, salt and pepper in a medium bowl.2 tablespoons extra virgin olive oil, 1 tablespoon white wine vinegar, Sea Salt and Ground Pepper
- Peel and spiralize (or grate) the beets.1 pound beets
- Combine beets and onion in bowl, tossing to combine.1/2 onion
- Let stand 30 minutes, tossing occasionally.
