Spa Orange Almond Brown Rice Pilaf

Ingredients
- ½ cup onion - chopped
- 1 cup celery - chopped
- 1 cup uncooked brown rice
- 1-1/2 cups water or chicken stock
- 1 teaspoon grated orange zest
- ½ cup fresh orange juice
- 1 tablespoon fresh lemon juice
- ¼ cup almonds - slivered, blanched and toasted
- ¼ cup dried fruit - chopped (we like raisins, cranberries, apricots)
Instructions
- Lightly coat a large saucepan with vegetable oil spray and heat over a medium flame.
- Saute the onion for 5 minutes and add celery. Saute again for 3 minutes.
- Add the uncooked rice and saute for 2 minutes.
- Add the water or stock, orange zest, orange juice, lemon juice, almonds, and dried fruit.
- Cover and reduce heat to low. Cook the rice for 15 to 20 minutes until all of the liquid has evaporated.
- Fluff and serve.
