Not Your Everyday Turkey Sandwich with Cranberry Relish
This recipe for a wonderful turkey sandwich will make use of the copious amounts of turkey you’re certain to have on hand this month. While not a typical recipe for “spa cuisine”, we’ve lightened this recipe up with Splenda or honey in place of sugar, and lower-calorie cream cheese in place of full-fat cream cheese. The end result is a a sandwich bursting with flavor, interesting textures, and making the most of its calories. It’s the perfect “holiday leftovers” treat. Enjoy.
Ingredients
Cranberry-Dried Plum Relish
- 2 cups cranberries - (a 12 oz package)
- 1 cup pitted dried plums
- 1 orange - peeled and quartered
- ½ cup pecans
- ½ cup Splenda Sugar Blend (or granulated sugar)
Sandwich
- 3 oz cream cheese (Neufchatel, reduced fat, low fat or skim) - softened
- ½ teaspoon ground sage
- 8 slices pumpernickel bread
- 12 oz. turkey - cooked, thinly sliced
- 4 lettuce leaves
Instructions
- Make Cranberry-Dried Plum Relish
- In food processor, process cranberries, dried plums, orange, pecans and sugar until coarsely chopped, pulsing on and off. Makes 3 ½ cups.
- Make Sandwich Filling
- In small bowl, mix together cream cheese and sage until blended.
- Spread cream cheese mixture evenly on four slices of bread.
- On each slice, layer ¼ of turkey, ¼ cup relish and 1 lettuce leaf over cheese mixture
- Close with second slice of bread.
- Reserve remaining relish for later use.
- Store, covered in refrigerator, for up to 1 week.

- ¼ cup pecans
- 2 tablespoons honey

- 4 wedges Laughing Cow Cheese
- ½ teaspoon ground sage
- 8 slices pumpernickel bread
- 12 oz. turkey cooked and thinly sliced
- 4 lettuce leaves
Instructions
- For Cranberry-Dried Plum Relish
- In food processor, process cranberries, dried plums (or dates or prunes), tangerine, pecans and sweetener until coarsely chopped, pulsing on and off. Add additional honey or agave to taste (but we found the dates to be a very sweet ingredient). Makes approximately 2 cups.
- For Sandwich
- In small bowl, mix together cheese wedges and sage until blended.
- To assemble sandwiches, spread cheese mixture evenly on four slices of bread. On each slice, layer ¼ of turkey, 1-2 tablespoons of relish and 1 lettuce leaf over cheese mixture; close with second slice of bread.
- Reserve remaining relish for later use. Store, covered in refrigerator, for up to 1 week.
