These no bake oatmeal cookies are made easily, and quickly in the microwave if you wish, combining oatmeal, peanut butter and cocoa.  We tried this recipe, courtesy of Conagra Brands, with both sugar and Splenda Baking Blend®, to save on additional calories.

These no bake oatmeal cookies are made easily, and quickly in the microwave if you wish, combining oatmeal, peanut butter and cocoa. We tried this recipe, courtesy of Conagra Brands, with both sugar and Splenda Baking Blend®, to save on additional calories.

Ingredients

  • cup Splenda Sugar Blend (or granulated sugar)
  • 2 teaspoons unsweetened cocoa powder - optional
  • 2 tablespoons fat free milk
  • 2 tablespoons No Sugar Added Peter Pan Crunchy Peanut Butter
  • ¼ teaspoon pure vanilla extract
  • ½ cup quick-cooking oats - plus a scant amount for garnish

Instructions

  • Stir together sugar, cocoa and milk in 4-cup glass measure or medium microwave-safe bowl.
  • Microwave on HIGH 1 to 1-1/4 minutes or until boiling, stirring once.
  • Stir in peanut butter and vanilla until blended.
  • Stir in oats until combined.
  • Drop by spoonfuls onto a waxed paper-lined plate to make 8 cookies.
  • Press on each cookie with a drinking glass or a piece of wax paper, and the palm of your hand.
  • Dust with scant amount of oats.
  • Cool in freezer 10 minutes before serving.

Spa Index Kitchen Notes

We calculated this cookie using Splenda Baking Blend. Increase the calorie count if using regular sugar.
Also, if you increase the size of the cookie to make six, your average calorie count is 116 per cookie.
We really enjoy using the Fairlife milk brand, with its decreased sugar and lactose count, and increased protein count. We used regular skim milk for the calorie count in this recipe, but by using Fairlife, we know there would be slightly less sugar and more protein -- even if only a few teaspoons at a time.

    This was good. I am curious if this works well with crunchy seed butters, like sunflower or almond? A little less “moist” than peanut butter.

    Any reduction in junk food, sugary food, fried foods, sweet foods, pork, and white-colored flour products is ideal. Thanks for these recipes and these cookies, but, would prefer something other than poisonous Splenda. Like Stevia!
