Matcha Coconut Chia Pudding- Kaiser Thrive
Breakfast or dessert? You decide how you to want to enjoy this light and creamy Matcha Coconut Chia Pudding. You’ve probably seen those Easter colored green lattes and blended drinks at your favorite coffee and tea haunts, but you may not be sure what Matcha actually is — sweet? Savory? Strong? Delicate? Well, Matcha is a powder made from very finely milled green tea leaves. Matcha tea leaves are grown and harvested a bit differently from other tea leaves, in order to increase the chlorophyll and L-theanine levels, resulting in both calming and stimulating properties, and dark, vibrant color. The finely milled leaves are mixed with water to form a paste, and then whisked into your beverage.
Here, Dr. Linda Shiue of Kaiser Permanante has used Matcha, Coconut Milk and Chia seeds to make a lightly sweetened and creamy pudding which is great for breakfast, after work or school, or dessert.
Ingredients
- 1 can light coconut milk
- 3 tablespoons chia seeds
- 1 tablespoon matcha powder
- 1 - ½ tablespoons honey
- ¼ teaspoon vanilla extract
Instructions
- Mix all ingredients together until smooth. Keep tightly sealed or in a jar with a lid and refrigerate overnight.
- Stir well before serving. Thin with additional water, if desired.
