This Heart Healthy Chicken Fruit Salad is full of chunky chicken, tasty pineapple, sweet grapes, and a low fat dressing.
Ingredients
- 3 cups chicken breast (cooked and diced)
- 8 ounce pineapple chunks (unsweetened)
- ¼ cup onion (minced)
- ⅓ cup reduced calorie mayonnaise
- 1 cup seedless grapes (red or green)
- ½ teaspoons ground coriander
- 1 cup celery stalks (finely diced or chopped)
- 2 tablespoons fresh lemon juice
- ¼ teaspoons fresh ground pepper
Instructions
- Gently combine and toss all ingredients.
- Serve on Lettuce Leaves, or, an English Muffin, Sourdough Bread, a Tomato, a Cantaloupe or Pineapple Half.
