Golden Door Turkey Burgers on Garlic Rosemary Buns
The Chefs and Culinary Team at Golden Door in California use the resort’s own four-acre organic garden to source the fruits, vegetables and herbs for all of the popular dishes, and then source the best of lean meat and seafood to craft beautiful and nourishing entrees, like this guest-favorite recipe for Golden Door Turkey Patties. The Turkey Burgers are enhanced by a homemade savory focaccia bun, but of course you can substitute your own whole-grain bun of choice. Chef Michael Stroot says “This is one of those meals that repeat visitors look forward to — and I hear about it if the turkey burgers are no on the weekly menu.”
Ingredients
TURKEY PATTIES
- ¾ pound ground skinless turkey breast - or use ground chicken
- ¼ pound ground skinless turkey thighs - the butcher or meat dept will grind for you
- 1 tablespoon shallots - minced
- 1 large egg white
- 1 tablespoon flat leaf parsley - chopped
- 1 teaspoon fresh tarragon - chopped
- 2-3 dashes Fresh Ground Pepper
- ½ teaspoon canola oil
- 2 small white onions
- ⅛ teaspoon salt
- 5 large leaf lettuce leaves
- 2 medium tomatoes - cored and sliced
- 1 small red onion - thinly sliced
- 1 medium dill pickle - thinly sliced

- Golden Door Ranch Dressing - See Recipe
Instructions
- Preheat your broiler or gas grill
- In a bowl, mix together the turkey, shallots, egg white, parsley, tarragon, and ground pepper.3/4 pound ground skinless turkey breast, 1/4 pound ground skinless turkey thighs, 1 tablespoon shallots, 1 large egg white, 1 tablespoon flat leaf parsley, 1 teaspoon fresh tarragon, 2-3 dashes Fresh Ground Pepper
- Form into 5 patties and set aside.
- In a sauté pan, heat the oil over medium heat. Toss the white onions with salt in the pan and sauté, turning a spatula, for 8-10 minutes, until the onions are soft and brown. Set aside.1/2 teaspoon canola oil, 2 small white onions, 1/8 teaspoon salt
- Spray the grill with vegetable oil spray. Grill the patties for 2-3 minutes on each side, turning to make grill marks. To assure the turkey is fully cooked, let the patties stand for 2-3 minutes after you remove from the grill, and a light press makes the juices run clear.
- Divide the lettuce leaves, tomatoes, sliced red onions, sliced pickles among the buns, layering them on the bottom bun.5 large leaf lettuce leaves, 2 medium tomatoes, 1 small red onion, 1 medium dill pickle, 5 Garlic Rosemary Focaccia Buns
- Add a modest dollop of Golden Door Ranch Dressing, if desiredGolden Door Ranch Dressing
- Top each bun with a turkey patty and grilled onions, and add the top bun.
