Golden Door Spa ANZAC Biscuits
Anzac Biscuits are cookie or chewy bars, made popular in Australia and New Zealand, typically made using rolled oats, flour, sugar, butter, golden syrup, baking soda, boiling water, and desiccated coconut. They were named after the Australian and New Zealand Army Corps (ANZAC) established in World War I, because wives and sweethearts sent their loved ones these cookies because they both shipped easily and stored a long time. In the United States, you can often see tubs of “Aussie Bites” and similar chewy treats at many bake shops. Here, Golden Door Health Retreat in Australia, offers its unique version, which omits the coconut, and uses roasted and mashed pumpkin. They are delicious and full of vitamins and minerals.
Ingredients
Ingredients:
- 1-1/2 cups oats (rolled, old fashioned)
- ¼ cup slivered almonds
- ¼ cup almond meal
- 4 tablespoons Vermont maple syrup
- 3 tablespoons coconut oil or coconut butter
- 1 tablespoon mesquite powder optional
- ½ cup roasted and mashed pumpkin
- 1.5 teaspoon cinnamon
- 2 teaspoons vanilla
- 2 teaspoons pumpkin seeds optional
Instructions
- Combine all ingredients in baking bowl. Then with wet hands form into cookies and bake in preheated oven at 325 degrees or 160°C for 10 mins or until golden.
- Allow to cool and set firm, before serving or storing.

Very tasty version of my favorite cookie
These were really good, and they are on the make-again list, but Why omit the coconut which is in most Anzac Biscuits? It’s such an important part of the flavor? I know many don’t like coconut, or perhaps they left it out because it adds sugar and fat? I guess I just answered my own question! I’d just use unsweetened coconut.
