Ingredients

  • 3 cups Gluten Free Almond Flour
  • ½ teaspoon baking soda
  • ¼ teaspoon Sea Salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cardamom
  • 1.5 cups fresh blueberries - fresh or frozen
  • ½ teaspoon pure vanilla extract
  • ½ cup honey or agave nectar
  • 3 whole eggs
  • Olive Oil (or similiar) Cooking Spray

Instructions

  • Heat oven to 325 degrees
  • Line a muffin tin with paper baking cups, and, spray those baking cups with cooking spray
  • Combine almond flour, baking soda, salt, spices, and mix together in a bowl.
  • Combine vanilla, honey or agave, and eggs, in a second bowl.   Blend with a whisk, thoroughly. Stir in blueberries, fresh or frozen, and mix, but try to keep them from breaking too much.
  • Now mix your wet and dry ingredients together, gently.
  • Evenly fill each baking cup with batter.
  • Bake 18-20 minutes.  Remove and let cool.
