Gluten Free Almond Flour Blueberry Muffins

Ingredients
- 3 cups Gluten Free Almond Flour
- ½ teaspoon baking soda
- ¼ teaspoon Sea Salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground cardamom
- 1.5 cups fresh blueberries - fresh or frozen
- ½ teaspoon pure vanilla extract
- ½ cup honey or agave nectar
- 3 whole eggs
- Olive Oil (or similiar) Cooking Spray
Instructions
- Heat oven to 325 degrees
- Line a muffin tin with paper baking cups, and, spray those baking cups with cooking spray
- Combine almond flour, baking soda, salt, spices, and mix together in a bowl.
- Combine vanilla, honey or agave, and eggs, in a second bowl. Blend with a whisk, thoroughly. Stir in blueberries, fresh or frozen, and mix, but try to keep them from breaking too much.
- Now mix your wet and dry ingredients together, gently.
- Evenly fill each baking cup with batter.
- Bake 18-20 minutes. Remove and let cool.
