Crock Pot Cajun Red Beans and Rice

Ingredients
- 2 cups red kidney beans - dried, washed and rinsed
- 1 cup brown rice - uncooked
- 1 medium red onion - chopped
- 1 medium red or green bell pepper - chopped
- 4 stalks celery - chopped
- 6 - 8 cloves garlic - minced
- ½ cup chives or scallions - chopped
- 4 teaspoons Cajun seasoning - salt-free
- 1 tablespoon smoked paprika
- 5 cups water
Instructions
- Add all your ingredients to your crockpot, with the veggies on top.
- Cook on LOW for around 7 hours. Cooking times may vary depending on your crockpot.
