Cranberry Ginger Mint Salsa
This sharp and tasty Cranberry Ginger Mint Salsa is great over fish, chicken, or even a block of fat free or reduced calorie cream cheese, with veggies to dip. Great for the holidays as well.

A sweet, tart and savory topping for your holiday appetizers. Fresh cranberries, ginger, jalapeno and mint combined to make a colorful treat.
Ingredients
- 8 ounce cranberries fresh or frozen
- 4 green onions
- 2 Jalapeño peppers
- ⅓ cup Splenda Sugar Blend (or granulated sugar) or other sweetener of your choice
- ¼ cup fresh mint leaves
- juice of 2 limes
- 1 tablespoon fresh ginger grated
Instructions
- Combine all ingredients in salsa maker or small food processor.
- Chill 2 hours and serve.
