Lake Austin Spa Cornmeal Raisin Scones
Terry Conlan was the Executive Chef (1992-2011) at Lake Austin Spa Resort in Texas and author of Lean Star Cuisine, Low-Fat Cookery from the Lake Austin Spa Resort (1996) and Fresh: Healthy Cooking and Living from Lake Austin Spa Resort (2003). He developed cornmeal raisin scones to serve a hearty but low-fat breakfast treat to guests.
Ingredients
- 1-1/2 cups all purpose flour
- ½ cup stone ground cornmeal
- 2 tablespoons sugar - or favorite granulated sweetener, such as maple sugar or coconut sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 2 tablespoons reduced calorie butter or margarine - suitable for baking
- ¼ cup golden raisins - or dried berry of your choice
- ¾ cup buttermilk - light or reduced calorie if available
- vegetable cooking spray
Instructions
- Preheat oven to 375°. Spray a baking pan with cooking spray.
- Combine first six ingredients (flour through salt).
- Cut in margarine or butter spread with a pastry blender or forks until mixture is crumbled but evenly textured. Do not let the margarine melt.
- Add raisins (or dried fruit) and buttermilk, and mix until just moistened and combined.
- Turn out onto a lightly floured board and knead five times. Roll into an 8 inch circle. Cut into 10 wedges. Separate and arrange wedges 1/4 inch apart on a sprayed baking sheet.
- Bake for 22 minutes at 375° Serve warm. Enjoy!
Good. Used dried blueberries instead of raisins. Thanks for the healthy spa recipes.
I make these every Sunday, and we enjoy them at home, and then I make extras to take to work on Mondays to reward the team who showed up and kept things running. Everyone likes them, especially after a minute or two in the air fryer, which is toastier than a microwave. Good with apple or fig butter.
