Cilantro Lime Cauliflower Rice – Paleo
This recipe for Cilantro Lime Cauliflower Rice is ideal as a side dish for both paleo friendly menus and low-carb entrees as well. It combines riced cauliflower in place of the grain, ghee, broth, and zesty flavors.

Ingredients
- 1 head cauliflower - grated
- 1 tablespoon ghee
- 1 small lime - juiced and zested
- 2-3 tablespoons cilantro - chopped
Instructions
- Grate the entire head of cauliflower into riced granules
- Juice and zest the small lime
- In a skillet heat the ghee over medium-high heat. Add grated cauliflower and saute briefly to soften.
- Add salt, lime juice and chicken broth, and continue saute briefly to reduce liquids.
- Toss with chopped cilantro to wilt and serve immediately.
