Chickpea Salad Sandwich – Hilton Head Health

One of the popular recipes served is this savory sandwich – CHICKPEA SALAD SANDWICH on whole grain bread (or serve it on a spinach salad if you prefer).
Ingredients
- 15 ounces chickpeas, drained and crushed
- ½ whole Red Onion, diced
- 3 tablespoons Fresh Basil, minced
- ½ whole Red apple, diced
- ½ whole Tomato, diced
- ½ whole Green Pepper, diced
- 2 whole Green onions, diced
- ½ cup Natural applesauce (no sugar added)
- 2 tablesoons Fresh lemon juice
- 1 tablespoon Extra Virgin Olive Oil
- 5 tablespoons Nutritional Yeast
- 2 ounces Gruyere cheese, sliced thin
Instructions
- In a medium bowl combine chickpeas, red onion, basil, apple, tomato, green pepper and green onion. Mix well.
- In a separate small bowl, combine applesauce, lemon juice, olive oil and nutritional yeast. Mix well.
- Combine the two bowls and mix well.
- Scoop a half cup of the chickpea salad on your choice of either toasted rye bread or freshly chopped salad and spinach greens. Top with 1/4 ounce of Gruyere cheese. Enjoy!
