Chicken Waldorf Salad – Kaiser Thrive

Summer Means Salad!   Warm weather means juicy tomatoes, green vegetables, outdoor dining and light and easy meals.   Salads are refreshing, require little to no cooking, and can be eaten as either your entree or a side dish.   If you’ve enjoyed Waldorf Salad before, it may have been a fatty, sugary and creamy fruit dish, or it could be a mayonnaise-heavy chicken dish.     This version was lightened and adapted, beautifully, by Nadia Borchardt, a Registered Dietitian for Kaiser Permanente, from a recipe she found on Eating Well.    It relies on blending both yogurt and light mayo to provide both added nutrition and that creamy texture relying entirely on fatty mayonnaise.

A creamy, tasty chicken salad perfect as a spa lunch.

Ingredients

  • ¼ cup low-fat mayonnaise
  • ½ cup low-fat or non-fat plain yogurt - Greek yogurt preferred
  • 2 teaspoons lemon juice
  • ¼ teaspoon salt
  • ¼ teaspoon fresh ground pepper
  • 3 cups cooked chicken breast - chopped or shredded
  • 1 whole red apple - cored and diced
  • 1 cup seedless grapes - halved
  • 1 cup celery - chopped
  • ½ cup walnuts - chopped

Instructions

  • Whisk mayonnaise, yogurt, lemon juice, salt, and pepper in a large bowl, until well-mixed, creamy and frothy.
  • Add chicken, apple, grapes, celery, and walnuts. Stir to coat well and serve.

The dressing can be made ahead of time and refrigerated overnight if desired. The chicken can be cut, boiled and refrigerated until ready to use, or you may choose to use pre-cooked chicken to shorten the preparation time.
You can also try using 1/2 of a blended medium avocado (instead of the mayonnaise) mixed with the yogurt for a boost of monounsatured fat, creaminess, and color.
