High Protein Low Carb Breadless Pudding
It isn’t pretty — but it sure is tasty. This reader contributed recipe is bariatric friendly — high in protein, low in carbs and sugar. It does have heavy cream so the fat grams will be higher than your average healthy dessert, but in moderation this can be an enjoyable dessert.

Ingredients
- 3 whole eggs
- ¾ cup heavy cream
- ¾ cup water
- 1 cup cottage cheese - small curd
- ½ cup Splenda Granulated Sweetener
- 1 teaspoon vanilla extract - 100% natural
- cinnamon to taste
- Olive Oil (or similiar) Cooking Spray
Instructions
- Place all ingredients into a mixing bowl and blend several minutes until as smooth as possible.
- Pour into a 8X8 casserole dish sprayed with cooking spray and bake at 350 degrees for approximately 50 minutes or until well browned on the top -- oven temps really vary and you'll need to adjust accordingly.
- Scoop out approximately 8 portions.
