Grapefruit Blueberry Mojito – Cocktails, Mocktails and Spa Party Drinks

Toasting your favorite holidays and special events doesn’t have to mean over-indulging, over-imbibing, or over-analyzing.  You clean eating program may mean you are abstaining from caffeine, wine and spirits entirely, or, it may mean that on special occasions, you want just a bit of the special stuff to mark the event. Our collection of recipes for lighter cocktails and mocktails are the perfect refreshers to raise a glass with friends and family.   In this recipe for Blueberry Mojito Mocktails, blueberries, mint, lime juice and honey are blended with club soda.

The perfect summer beverage! Grapefruit, Blueberries, mint, lime juice and honey are blended until smooth, then strained and mixed with club soda. Pour over ice and then feel free to serve in pretty glassware! Just because it's a mocktail, doesn't mean it can’t be served in a festive glass. Garnish with fresh grapefruit, blueberries and mint for an added touch.

Ingredients

  • 1 half grapefruit - juiced
  • 1 half grapefruit - sliced
  • 1 cup fresh blueberries
  • 4 whole Fresh mint leaves
  • 1 whole lime - juiced
  • 2 teaspoons honey
  • 4 ounces club soda

Instructions

  • Combine blueberries, mint, juice from one whole lime, juice from 1/2 grapefruit, and honey in a blender and blend until smooth.  Taste, and adjust or add honey to suit, based on how sweet or sour your citrus fruit is.
  • Strain through a fine mesh sieve. Add club soda. Serve over ice. Garnish with mint and fruit.

Bear in mind you're straining out the "body" of the blueberries, to get a clear mocktail, which leaves you with some good stuff in your strainer, flavored with mint and honey.  Why not add it to your next serving of yogurt, or your morning smoothie, for a little bit of a boost?
