Loaded Baked Potato Salad – Hilton Head Health

One of the popular features of the program is when H3 teaches participants how to prepare meals, snacks and beverages — especially how to do a makeover of a holiday favorite or potluck cookout favorite — like this LOADED BAKED POTATO SALAD — which is lightened considerably but still packed with flavor.
Ingredients
Salad
- 1 lb Idaho potatoes - quartered
- 3 tablespoons Bacon - cooked and chopped (consider using Turkey Bacon)
- 4 oz Reduced-fat Cheddar Cheese - shredded
- ¼ cup Green onions - chopped
- 4 oz H3 Sour Cream Substitute - see below
- 2 eggs - hardcooked, peeled, and minced - optional
- 1-2 small gherkin pickles - chopped - optional
H3 Sour Cream Substitute
- ½ cup Cottage cheese - 1 % fat, pureed smooth
- ¼ teaspoon lemon juice
Instructions
- Bring a large pot of water to a boil.
- Add potatoes, allow potatoes to cook until fork tender, about 10 minutes.
- Remove cooked potatoes from water and transfer to a large bowl. Allow the potatoes to cool in the refrigerator for about 20 minutes.
- Prepare H3 Sour Cream by combining cottage cheese and lemon juice into a food processor and blend until very smooth.
- In a separate bowl combine H3 Sour Cream, green onion, salt, chopped bacon, and reduced-fat cheddar cheese -- plus chopped hard cooked eggs and pickles,, if using.
- Once the potatoes have cooled toss them in the sour cream mixture.
- Keep cold until serving.
