Baked Ginger Bars – Skyterra Recipe
Soft, cake-like ginger bars are the perfect occasional treat. Try as an accompaniment to breakfast, as a dessert, or a snack. Courtesy of Skyterra Wellness Retreat in North Carolina.
Ingredients
Ginger Bars
- 1 cup rolled oats - gluten-free if needed
- 1 tablespoon ginger - fresh, peeled and finely grated
- ¼ teaspoon cardamom
- 1 teaspoon baking powder
- 1 teaspoon sea salt
- ¼ cup coconut oil - melted
- 1 cup coconut milk - full-fat
- 1 medium banana - ripe or very ripe
- 2 tablespoons raw honey - local if possible
- 2 large eggs
- 2 teaspoons pure vanilla extract
Optional Toppings (choose 1)
- 1 whole berry - per serving
- ¼ cup almonds - thinly sliced
- ¼ cup oatmeal - dry flakes
- ¼ cup banana slices - dried
Instructions
- Preheat oven to 375 F.
- Adds oats to food processor and pulse until smooth (you're using as a flour)1 cup rolled oats
- Add ginger and cardamom to oats and blend again until mixed. Add baking powder and salt and blend again.1 tablespoon ginger, 1/4 teaspoon cardamom, 1 teaspoon baking powder, 1 teaspoon sea salt
- In another bowl, combine coconut milk, melted oil, honey, banana, eggs and vanilla extract. Whisk well, mashing the banana as you go.1/4 cup coconut oil, 1 cup coconut milk, 1 medium banana, 2 tablespoons raw honey, 2 large eggs, 2 teaspoons pure vanilla extract
- Add dry goods into wet ingredients and mix until just combined.
- In a greased 9 x 9 pan, add mixture and lightly knock the pan bottom on the counter to evenly distribute the batter.
- Scatter or arrange 1 of the optional toppings, if desired, to evenly cover the batter.1 whole berry, 1/4 cup almonds, 1/4 cup oatmeal, 1/4 cup banana slices
- Bake 15-20 minutes.
- Cool slightly and serve.
