Oatmeal Peanut Butter Ricotta Cookies
This recipe for healthy Oatmeal Peanut Butter Ricotta Cookies is from Shaun T, creator of the Insanity Workout. Made with ricotta cheese, they are high in calcium and one serving is only 70 calories or so, low sugar, low fat – a perfect midmorning snack that will tide you over until lunchtime. Makes five cookies (1 per serving).
Ingredients
- 1 tablespoon peanut butter (all natural creamy)
- ¼ cup old fashioned rolled oats
- ¼ cup ricotta cheese - skim or low fat
- 2 packets granulated stevia - or more to taste
- ¼ teaspoon baking powder (low sodium)
- 1 whole egg whites
- 1 dash ground cinnamon
Instructions
- Preheat oven to 350 degrees.
- Line baking sheet with parchment paper.
- Mix all ingredients with a fork, mashing the cheese thoroughly with the oats and peanut butter.
- Spoon out 5 equal portions onto the parchment paper.
- Bake 10-12 minutes until tops start to brown. Let cool before lifting.

Good. Don’t hold up well (soft and fall apart easily) but they don’t last long, so that’s okay!
I really didn’t think I would like these, but they turned out so soft and creamy, never going to try the old way again- thanks!
