Cilantro Lime Grilled Shrimp – Under 150 Calories
We adapted this recipe from a delicious version served at Hilton Head Health — their version was a skewer of chicken and pineapple, but our version is just a tasty with fresh Shrimp. Enjoy Cilantro Lime Shrimp on your grill outdoors, or an indoor sheet pan in a hot oven.

Ingredients
Skewers
- 16 medium prawns or shrimp - peeled and veins removed
- 4 Wooden skewers - soaked in water
Marinade:
- 1 Cup Chicken Stock - or vegetable stock
- 2 whole Limes - juiced and zested (or try lemons)
- ¼ Cup Cilantro - fresh, chopped finely
- 1 teaspoon garlic - minced
- 1 tablespoon Extra virgin olive oil
- ½ teaspoon Salt
- ¼ teaspoon Ground black pepper
- ¼ teaspoon Ground red chili pepper
Garnish
- ½ teaspoon sesame seeds
Instructions
- Combine marinade ingredients in a bowl.
- Thread 4 shrimp or prawns onto each wet skewer (8 shrimp and 2 skewers per person)
- Lay skewers in a single layer on a baking sheet or in a glass tray. Brush each skewer liberally with marinade. Reserve extra marinade for serving.
- Wrap the tray to cover, and marinade for 15 minutes. Be careful about marinading seafood too long in lime juice -- it will begin to "cook" from the acid.
- Remove skewers from marinade, grill skewers on high heat ( or bake) until the shrimp is pink around the edges and no longer translucent.
- While skewers are grilling (or baking), heat the reserved, left-over marinade. Serve as a dip for the skewers.
- Garnish wish sesame seeds or chopped green onions
- Enjoy!
