Strawberry Rhubarb Crumble – Hilton Head Health
The Chef and Culinary Team at Hilton Head Health have created a low-calorie, healthy gourmet cuisine with an emphasis on local and natural ingredients to ensure a well-balanced weight loss diet. One of the popular features of the program is when H3 teaches participants how to prepare meals, snacks and beverages, and make interesting condiments, treats and seasonal dishes — such as the classic summer combination of STRAWBERRY RHUBARB CRUMBLE.
There is nothing like a summer picnic or family reunion without the seasonal strawberry rhubarb dessert. This is a great dessert in the summer months, uses less sugar than traditional recipes, and the crisp topping can be used with any other of your favorite fruits, such as apples or peaches. If you have rhubarb that grows close to you and enjoy it year round, it can be cut and frozen very easily for future use.
Equipment
- 8 Ramekins; or
- 1 8x8 Baking Pan
Ingredients
- 4 cups Rhubarb - cleaned, cut into medium bite-sized bits
- 4 cups Strawberries - cleaned, halved
- ½ cup Sugar
- 1 cup Water
- 2 tablespoons Cornstarch
- ½ cup Oats - rolled, dry old fashioned or quick (but not instant)
- ½ cup All Purpose Flour
- ¼ cup Brown Sugar - light
- ¼ cup Light Butter Spread - softened
Instructions
- Preheat oven to 350° F.
- Spray baking pan or single serving ramekins with cooking spray (PAM).
- Cut fruits, mix together and lay in bottom of pan or evenly in ramekins
- In a sauce pot mix together the sugar, water and cornstarch
- Cook sauce until sugar is dissolved and sauce is semi thick. Should be like a glaze.
- Pour glaze over strawberries and rhubarb.
- In another bowl, mix flour, brown sugar, oats, and softened butter. Mix until topping is crumbly mixture.
- Place the oat crisp crumble topping mixture over the fruit mixture.
- Bake for 25 minutes.
- Little bubbles should come up the sides of the crisp.

Chef Karla has been featured live on the Hallmark Channel’s Home & Family Show. In addition to her love for nutrition and healthy cooking, Karla enjoys teaching part-time fitness classes. Her passion for living a well-balanced healthy lifestyle is apparent in her cooking demonstrations at Hilton Head Health.
