Ingredients

  • 1 ½ cups whole-wheat flour
  • 1 cup unprocessed wheat bran
  • 1 tablespoon baking powder (low sodium)
  • ¼ teaspoon baking soda
  • 3 tablespoons fructose
  • 1 teaspoon cinnamon
  • cup raisins
  • 1 ½ cups buttermilk (reduced calorie)
  • 1 egg
  • 1 tablespoon pure vanilla extract

Instructions

  • Preheat the oven to 350.
  • Spray a standard-size (9 x 5 inch) loaf pan with non-stick cooking spray.
  • Combine the flour, bran. baking powder, baking soda, and cinnamon in a large bowl and mix well.
  • Add the raisins and mix again.
  • Combine the buttermilk, egg, and vanilla in another bowl and mix.
  • Pour the liquid ingredients into the dry ingredients and mix until moist.
  • Spoon the mixture into the prepared loaf pan and bake in the preheated oven for 45 to 50 minutes, or until a knife inserted in the center comes out clean. Place the bread, while still in the pan, on its side on a wire rack to cool.
  • Store, tightly covered, in the refrigerator.

Canyon Ranch combines Ricotta Cheese and Greek Yogurt to make a spreadable "Fitness Cheese" in place of higher calorie cream cheese. You can easily customize it by snipping fresh herbs, dried fruits, or even a vanilla bean into it.
Crystalline Fructose is produced from corn, but should never be confused with high fructose corn syrup (HFCS), which is highly processed with varying amounts of glucose and fructose.  
Fructose is the sweetest of all nutritive sweeteners, ranging from 1.2 to 1.75 times sweeter than table sugar -- so use sparingly.  You can always add more, but you can't take it away, so add a bit at a time until you are used to its sweetness profile.
Of the three sugars (sucrose, glucose and fructose), fructose has the sweetest taste but least impact on your blood sugar.  The customary substitute is 2/3 cup of fructose crystals for every 1 cup of sugar called for, in a recipe.

    We got used to having this, toasted for breakfast, and now we make a batch when we travel and take it with us. It’s just something very comforting and familiar to us. I bring some to my Nana when I visit and she always toasts it, makes a little less “spa like” but spreading it with full fat cream cheese and then some of that healthy no-sugar apple butter. :)

    all the bread recipes going around are sourdough (meh) but this helped me some powdered buttermilk and my stash of raisins and craisens. Was very good.

    good bread but not sure I’d call it “regular rotation” good. Just good.

    This is also excellent with “YoChee.” Drain a tub of Greek Yogurt overnight until it is as thick as cream cheese. Customize with herbs and spices, a dab or jelly or jam, or dried fruits. This thick, spreadable yogurt-cheese is a great replacement for cream cheese.
